I havn’t posted in a while! Sorry for not keeping up with our camping blog lately. I recently started in a new position with my company and now have a more “normal” work schedule which will be more supportive to our camping and blogging activities. CampingCajuns also purchased a new motorhome shown below:
Made our summer beach trip reservations today. Going to actually stay a few miles from the beach at a nice looking campground my in-laws found on a recent trip to Alabama. It is in Foley, Al just a few miles from Gulf Shores. The place is Johnny’s Lakeside RV Resort. We are going in June for my daughter’s birthday. On this trip we have our in-laws and my wife’s sister and husband. Can’t wait to check it out and make some new memories!
On this trip we had so much food! Where do I even begin? We had slow cooked bbq baby back ribs, fried pork ribs, fried crawfish etoufee stuffed pistolets, fried boudin balls, sausage, homemade hummus dip, multiple desserts, gumbo, burgers, biscuits and gravy, bacon, sweet potato pancakes and on and on and on…. We once again shared the campground with the Krazy Cajun Campers. They cooked all weekend as well on a new homemade pit that they were practicing on for an upcoming bbq competition. This was also the first trip with our street legal golf cart. Needless to say but the Park Rangers did not havy any issues with it. The trip went by way too quick but we ate enough to survive the rest of the winter. This was the first trip of the winter that was actually cold and we burned a fire the entire time we where there. Here is the design for our new Camping Cajuns T-Shirts. They have gone to print and I should receive the shipment next week. If all goes as planned I will be able to hand them out at our next camping trip. Hope everyone likes them.
The Camping Cajuns spent New Years weekend 2012 at Chicot State Park in Ville Platte, Louisiana. The group consisted of The Gautreau’s, The Laporte’s, The Brignac’s and The Moran’s. We also ran into another camping group from Louisiana that call themselves Krazy Cajun Campers! Go figure, and they are from the same parish we are from. We stayed for 4 nights and 5 days. Our group cooked cracklings, jambalaya and the traditional pork, cabbage and black-eyed peas on New Years Day. The Krazy Cajun Campers group cooked chicken and dumplings, gumbo, and roasted a pig and a couple of chickens over an open fire. They also brought an entire sack of fresh oysters that were awesome to say the least!
……….camping, cooking and tailgating! It’s what we do! Making Memories
One gallon of apple cider, half a gallon of apple juice, a cup and a half of sugar, and 8 to 10 cinnamon sticks. Bring to a boil and simmer for 30 minutes let it cool completely and add a fifth of everclear. Refrigerate and enjoy.
